Oats soaked in Kombucha - can this be delicious?! Yes, it can! We promise. Anyone who has ever enjoyed a fruity, fresh cider cake in summer will also love this recipe. Mixing oat flakes with a sourish aroma sounds quite unusual at first. But together with sweet apple slices and a creamy whiff of mascarpone it will make a full breakfast or irresistible dessert.

How we came up with this unusual recipe? It's very simple: Oat flakes are back! Hardly any other traditional food has been rediscovered recently by so many people with enthusiasm as the good old oat flakes. No wonder, because the domestic superfood has many advantages: Oat flakes taste delicious, as a grain it is always "whole grain", very rich in energy and makes you full for an extra long time. The fiber contained in oats also ensures that blood fats are broken down more quickly and sugar compounds are absorbed more slowly. This is the best way to prevent cravings. And oat flakes contains around 14% protein, which makes it the ideal food for athletes. Oats are considered to be so versatile and healthy that it was even voted the official medicinal plant of the year 2017.

If you soak oat flakes in the refrigerator overnight, you will get a wonderful, filling basis for breakfast in the morning, which can be varied in many ways. Well suited and traditionally popular are of course all dairy products, including Kefir and yoghurt, as well as soy, oat and almond milk for those who want to do without animal dairy products. But the nutritious fillers also taste very delicious with fruit juices. Or just, like here, with Kombucha, which you brewed before from your Kombucha fungus of Wellness-Drinks.



Overnight Oats mit Kombucha
The ingredients:
  • 5 tablespoons of spiny oat flakes (50g)
  • 100ml Kombucha drink, preferably rather mildly fermented (go to Kombucha production)
  • 1 small, sweet apple
  • 1 good knife point cinnamon
  • 2 tablespoons mascarpone or whipped cream
  • As desired: some flaked almonds, goji berries, brittle or chocolate chips for decoration


It's very simple:
  1. Mix the oat flakes with the Kombucha drink and the cinnamon and let it swell overnight in the fridge, covered in a glass or a bowl.
  2. The next morning, roughly stir in the mascarpone (or whipped cream).
  3. Wash and clean the apple and spread it in thin slices on the breakfast. Because the Kombucha already gives the dish an acidic note, sweet, low-acid apples such as Golden Delicious or Royal Gala are best suited.
  4. Decorate as desired and consume immediately.
