Handkäs with Kombucha and music

Handkäse mit Musik schmeckt besonders lecker mit Kombucha in der Marinade

The Hessian national dish in a different way: With Kombucha in the marinade, hand cheese becomes a particularly full-bodied pleasure. By the way: Did you know that Handkäs contains less than 1% fat, but up to 30% protein? Ideal for sportsmen and women and all those who pay attention to a protein-rich diet - and with real Kombucha, fermented by your Kombucha culture, as double as delicious!

 

The ingredients:
  • 200g Handkäs (or Harz cheese) in slices or rolls
  • 120ml ripe Kombucha or Kombucha vinegar (go to the recipe)
  • 1 spring onion or mild red onion
  • 1 radish and 1 tomato as garnish
  • 2 tablespoons neutral vegetable oil
  • some salt and pepper
  • 1-2 tablespoons of apple or white wine vinegar
  • a few pinches of caraway (as desired)

 

The preparation:
  1. Place the Handkäs or Harz cheese in a deep plate, pour 120 ml Kombucha or Kombucha vinegar over it and sprinkle with the finely chopped onions.
  2. Spice to taste with a little oil, salt and pepper.
  3. If Kombucha vinegar is used, no additional acid is usually necessary, otherwise pour a little vinegar. Round off to taste with a few pinches of caraway.
  4. Leave to stand for a few minutes and then serve with radish or tomato slices. Tastes best with a piece of bread and butter.

 

Things to know: Handkäs and Harz cheese differ in their production methods and the cultures used, but both are made from lean sour milk quark and taste quite similar in our opinion (please do not write any nasty e-mails!). Both can be used equally for the recipe.

Tip: If you want a particularly aromatic Handkäs, you should wait until it is fully ripe and the best-before date has almost passed. In order to speed up the maturing process, the well-packaged cheese can be stored at room temperature for a day before consumption (except in high summer).
